I'm sure this has been written in here before, but just wondering what the correct water temperature is for plucking Pekin Ducks??

Not sure about ducks however when I do chickens I aim for 75 degrees C. Hold under water for about 20 seconds or until the large wing/tail feathers come out easily. May take longer if water is not as hot.

I go at 65 oC and put some dishwashing detergent in the water as it helps to wet the duck feathers that makes them slightly easier to get out. Much hotter than that and you have to be really careful not to dunk for too long. Otherwise the skin will tear.

Dunk for about a minute, pull it out and check how the wing feathers come out. If they are too hard dunk again. However bear in mind that ducks are one of the more difficult to pluck poultry. I fi d turkeys the easiest followed by chickens.
