I am thinking of getting a kipper smoker and wondering if anyone does this and can let me know when you know the ckicken is ready.

The most important thing would be to make sure it's hot enough to cook the chicken and you do it for long enough. The kipper smoker might come with instructions for cooking chicken. I am sure you would be able to do chicken in it - would just take a bit longer than the fish would (though the time will depend on the heat level).
