These are soft, thin biscuits, easy to make and quite delicious.

Soft Zucchini Spice Biscuits
Ingredients
• 1/2 cup butter or margarine, softened
• 1 cup brown sugar (loosely packed)
• 1 egg
• 1 3/4 cups plain flour
• 2 teaspoons baking powder
• 3/4 teaspoon ground cinnamon
• Good pinch of salt
• 1/4 teaspoon ground nutmeg
• 1/4 cup milk
• 1 1/2 cups grated zucchini
• 1/2 cup chopped walnuts
• 1/2 cup raisins or sultanas
• 1 teaspoon grated orange peel or orange marmalade jam

Directions:
In a mixing bowl, cream the butter and brown sugar; add the egg and mix well. Combine dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, nuts, raisins and orange peel. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 12-14 minutes or until edges are lightly browned and cookies are set.
