I need to dress my IG cokerals this Sat to accomodate two from Jodie.

I would like to keep it for a party in August. Would it still taset as good as if I roast it on the day after it had been dressed?

It depends is how you prepare the bird and how good your freezer.

The way to maintain highest quality when freezing is to snap freeze. That is difficult to do with many home freezers but you can come very close by chilling the bird overnight in your fridge. Then putting it in the freezer the next day. That way the bird freezes quickly.

Storage of six weeks should be fine.

Longer storage depends on the type of freezer. The cyclic defrost ones are poor for long term storage while the old style ones are much better.

I've had chooks in the freezer for weeks and, as long as they were well glad-wrapped, they were find.

My friend had one of my Pekins in her freezer for a year before she roasted it and now she's begging for another one!

Personally I think chooks are more tender after a good rest in the fridge of about 3 days before eating. I would give it a good rest before freezing as well.

The government says its safe to store a chook in the freezer for a year http://www.foodsafety.gov/keep/charts/storagetimes.html and those are super cautious time limits. They suggest chicken should only be in the fridge for 2 days which seems really ridiculous as most chicken has been kept in refrigerated conditions for at least a week before you buy it I'd guess.
