I have been helping our local primary school with hatching eggs in the classroom, and raising chickens. Does anyone know of any activities and classroom resources for teaching things about poultry to primary aged students?

Google poultry lessons. There's a heap to sort thru but you should find something useful.

Ask them what they want to know... or ask them to tell you what they already know. That should get you a good base to work from.

You could use their writings on "What I know about poultry"... as things to respond to as either true, false, nobody knows, or "well.. sort of..." with additional information given on each (regardless of whether correct or not).

Or not. Either way.
