I love eating duck eggs for breakfast - poached preferably!
However, I find they are tricky to crack neatly, without getting shell in the egg or egg white over the bench. The membranes seem to be the problems, they are thick and less "breakable" than chicken eggs and hence don't crack neatly.
Any advice?

I agree and have the same problem.

Best to break separately into another dish first rather than directly into what you are about to cook. :-)

A serrated edged knife helps either a bread knife or a steak knife. A good strike then rotate the egg a bit then another don't get over enthusiastic though.
